Hello every One, and welcome to the Magical Monday Motive a Sean Edition and today’s ‘Food for Thought’, thank King You for joining Me. Today’s feature photo was the meal I had prepared to enjoy after the first day of resuming My workout. Baked potatoes stuffed with sour cream, mushrooms, spinach, feta and butter, and two breaded, boneless chicken breasts stuffed with broccoli and cheddar.
I can cook well enough if I Wish to but because I am only cooking for One, I don’t tend to spend a lot of time on preparing meals, nor would I Wish to. But that doesn’t mean I don’t eat well when I can and the featured plate I enjoyed on April Fool’s was delicious and easy enough I thought I should share. Food photos also do well on Pinterest and I figured this would make a Good addition to My ‘Kings without Queens’ board (bachelor life 101).
The potatoes are ‘russets’ which are great for baking and have the kind of skin One wants on a baker. The oven should be pre-heated to 450. Choose and clean the potatoes, medium size works best. When the potatoes are clean and the oven is ready to go, place on the bottom oven rack on a baking tray and set a timer for twenty-five minutes.
After twenty-five minutes, remove the potatoes from the oven. Roll each of the potatoes in butter until they are covered (using your Hands is easiest but hot, be careful). Slice each down the middle and place back in oven for another 25 minutes (set a timer).
Remove the potatoes from the oven and use a spoon to (carefully) scoop out the flesh of the potato and place in a separate bowl large enough to mash and mix. Once all insides are in the bowl, add roughly a tablespoon of butter, a couple of large tablespoons of cream cheese, and feta, mash together. Use anything You have that Will be Good loaded onto a potato. I had cheddar cheese, too but decided to leave it out of the mix and place it on top. I added chopped mushrooms and spinach to My potato mix after it was mashed (so One is not crushing the mushrooms and spinach, too) and stirred it all in. Then reconstruct the potatoes by re-stuffing them with the new mix.
The chicken breast was already a stuffed, breaded and frozen bachelor special which required 30 minutes at 400 degrees. I turned the oven down while I was stuffing the potatoes, then placed them back in the oven with the chicken breasts for another thirty minutes. I did My workout while the meal was in its final stage of cooking.
I have now made this meal twice with a different protein (basa fillet) and the second time I made this I placed cheddar cheese slices across the slit in the potato for the last thirty minutes cooking time – absolutely awesome! These potatoes may not look like much but I am telling You they are delicious!!! It does take some oven time but the ‘work’ is minimal relative to the reward for the effort.
And because it’s the Motive a Sean Edition and I’m tall King about food for a change, I figure I should probably also share My breakfast with You, too. I basically eat one of three things for breakfast; eggs, cereal, or pancakes. Most of the time My preference is eggs, cereal is a late start lazy breakfast and pancakes are for when I Wish for something different. Eggs are the main staple.
My two favourite Ways to eat eggs are fried over easy or in an omelet. Today I’m sharing My omelet recipe with You because although it is a little more work than a regular spinach, feta and mushroom omelet, it is well worth it.
So this isn’t just an omelet. This is an epic omelet on toasted, marble pumpernickel rye. I make an amazing omelet into a monstrous sandwich. I have had plenty of omelets where I’ve just chopped up the ingredients, thrown the in with the egg and dumped it in the fry pan. Believe Me, taking the time to saute the spinach and mushrooms first, then adding them to the omelet mix makes a world of difference when it comes to flavour. The spinach and mushrooms are not cooking with the egg, they are already cooked and the flavours are leeching into the egg mix. Marble pumpernickel rye is the perfect compliment to these foods, too because it has just enough bite but not enough to be overpowering.
Oh, and the bachelor life 101 thing is all about minimal dishes. The two above recipes require two dishes each for cooking and prep, one for eating. The added bonus to sautéing the spinach and mushrooms first is that it leaves just enough butter behind to grease the pan for the omelet. A bowl, a frying pan, a plate and utensils are all One needs to make an amazing breakfast.
Alright, all this talk of food has made Me hungry. I think tonight I Will be having rice with chicken but I haven’t decided yet – may go with a seasoned basa fillet.
